Chocolate Cupcakes 2

The second stop on our sweet monorail crawl is a cupcake inspired by the Godiva Chocolate cocktail at the Grand Floridian’s Mizner’s Lounge. The drink is made with Stoli Vanil Vodka, Godiva Chocolate Liqueur, White Creme de Cacao, and Frangelico. These flavor of these cupcakes mirror the chocolate and hazelnut flavors in the cocktail.

To make 18 cupcakes, you will need:

1 stick butter
1 cup sugar
1 1/2 cup cake flour
1/2 cup cocoa powder
2 tsp baking powder
1/2 tsp salt
2 tsp espresso powder
1/2 cup Godiva liqueur
1/2 cup whole milk
1 tbsp vanilla extract
1/4 cup Nutella
2 eggs

…and for the frosting…

4 cups powdered sugar
1 tsp espresso powder
1 1/2 cup cocoa powder
1/2 cup nutella
1 tsp vanilla extract
1/2 cup milk
Pinch of salt
1 bag dark chocolate covered almonds, for garnish (optional)

To make the cupcakes:

First, cream together the butter and sugar.

Then, add the eggs one at a time. Incorporating the first egg completely into the batter, before adding the second egg.

Add the Nutella.

Finally, combine the dry ingredients in a bowl and sift or whisk them together. Combine the remaining wet ingredients together in a measuring cup. Alternate adding wet and dry ingredients to the batter in three equal parts.

Fill two lined cupcake tins 3/4 full with the batter. Bake at 350 F for 20 minutes.

While your cupcakes are baking, make the frosting. Combine 1/2 cup butter with 2 cups of powdered sugar. Mix until smooth. Add the milk, Nutella, and vanilla extract. Mix to fully incorporate. Add the salt, espresso powder, cocoa powder, and remaining powdered sugar. Mix until smooth. Refrigerate until ready to use. When cupcakes have completely cooled, pipe or spread frosting onto cupcakes. Garnish each cupcake with a dark chocolate-covered almond. Enjoy!

 

Godiva Chocolate Martini Cupcakes

  • 1 cup sugar
  • 1 ½ cup cake flour

  • 3 tsp espresso powder
  • ½ cup Godiva® chocolate liqueur
  • 1 cup whole milk
  • 1 tbsp + 1 tsp vanilla extract
  • ¾ cup Nutella®
  • 2 eggs
  • 4 cups powdered sugar
  • 1 bag dark chocolate covered almonds, for garnish (optional)

Instructions

    To make the cupcakes:
  1. First, cream together the ½ cup of butter and 1 cup of sugar.
  2. Then, add the eggs one at a time. Incorporating the first egg completely into the batter, before adding the second egg.
  3. Add ¼ cup of Nutella® and mix to combine.
  4. Combine 1 ½ cups of cake flour, ½ cup of cocoa powder, 2 tsp of baking powder, ½ tsp kosher salt, 2 tsp of espresso powder in a bowl. Sift or whisk these dry ingredients together.
  5. Combine ½ cup of whole milk, ½ cup of Godiva® chocolate liqueur, and 1 tbsp of vanilla extract in a measuring cup.

  11. Add a pinch of salt, 1 tsp of espresso powder, 1 ½ cup of cocoa powder, and the remaining 2 cups of powdered sugar. Mix until smooth.
  12. Refrigerate until ready to use. When cupcakes have completely cooled, pipe or spread frosting onto cupcakes.
